Healthy Recipes Love.

This entry is written specially for a special friend, Sandra. I've been promising to do this for about a week now and I've been slackin'. Ok... so some of you may know that I tried to become Vegetarian earlier this year. I tried, I really did but it's so hard when you've been eating a certain way for most of your life. I did great. I lost weight and felt so much better but it was a lot of work. And I fell off the bandwagon. But I still incorporate some of these recipes into our weekly menu. Some are vegetarian but are very TASTY and don't even feel like they are vegetarian at all! I mean, to tell you that my husband loves them a lot too. And he's a big meat eater! LOL

Ok... here we go. The list.

1. Poblano White Chili: This is SOOOOO freakin' good! My husband fell in love with it so we make it often. Make sure you add the squirt of lemon and the pumpkin seeds to it ok? I always forgot to sprinkle some seeds into when we served it. LOL We ate it with crackers. It's very filling so I never make anything to go with it.

2. Coconut Caribbean Rice : This rice is soooooo delicous! Seriously. When I make this, I usually make some coconut curry or some sort of chicken to go with it. Maybe a chicken recipe that called for coconut milk, period. Or even an asian recipe! Something sweet. Very nice comb. I remember making a mango curry of some sort but I can't find the recipe for that. =) This is Vegetarian too.

3. Spaghetti with Spinach & Mushrooms: Ohh... this was another favorite too. I love mushrooms a LOT so this was heavenly for me and we got our greens at the same time.

4. Black Bean Chili: Hubby LOVED this one too. Specially because it called for a beer in the ingredients. Sandra, I know you're preggy and can't have alchohol but maybe you can skip this part? LOL I had a beer or two throughtout my whole pregnancy and Sofia came out ok... and besides, you wouldn't be having the whole bottle, so it's completely up to you. =)

5. White Pizza with Brocolli and Mushrooms: I haven't tried this recipe honestly. Only because our oven doesn't work. =( If you try it, please let me know if it's good because I'm DYING to try it!

Those are all Vegetarian recipes listed up there. These ones coming up next are a few I've found online that are somewhat healthy? And I absolutely LOVE.

1. Cold Asian Noodle Salad: OMG, you don't even KNOW how much I love this recipe. I LOVE asian food but sadly, due to the high sodium content in most asian restaurants/take-out food, I can't go eat at those places anymore. If I want asian food, I have to make it myself. But I had no clue how. This one is easy. And I LOVE it so much! She's not very specific as far as "amounts" go but I just kind of guessed and did it to my taste and it came out good. I skipped the basil because I don't like how it tastes but the cilantro gives it that perfect taste. That's all you need really. I put lots of the hot sauce on it because I love spicy food but you might want to watch how much you add to it since it might give you heartburn due to your pregnancy, Sandra. =) Oh and I'm making this for lunch today. =)

2. Healthy Spring Rolls: I haven't tried this recipe yet. Because I haven't made my way to the "Oriental Food" store here in town but I LOVE fresh spring rolls and the peanut sauce is made from scratch so I def want to try this! MUST MUST! BTW, check out Alisa's other recipes. They look SOOOOO good!

3. Spaghetti with Roasted Tomatoes and Herbs: Have made this one. SO good! I sprinkled "Red Chilli Pepper Flakes" because I have to have some spice in my food! LOL

I really recommend subscribing to "Vegetarian Times" magazine. Even if you're not going strictly Vegetarian. It's just good to see all the delicious options you have. Seriously. I have every single issue and I go through all of them when I want to cook something healthy that tastes GOOD enough to eat. Over and over and over again. HEHE =)

  2. Mark and I were just talking about this the other day because it's a great way to live and lose weight. I just don't think I can do it and he said it was hard when he did it...we'll see. We can always eat healthier in between eating meats and stuff...
